Unstuffed bird: 325 degree oven

8-12 lbs = 2 3/4 to 3 hours

12-14 lbs = 3 to 3 3/4 hours

14-18 lbs = 3 3/4 to 4 1/4 hours

18-20 lbs = 4 1/4 to 4 1/2 hours

20-24 lbs = 4 1/2 to 5 hours

Kitchen Measures

3 tsp = 1 Tbl                   8 oz = 1 cup

16 Tbl = 1 cup                16 oz = 1 lb

2 cups = 1 pint                .946 liters = 1 quart

4 cups = 1 quart             236 ml = 1 cup

1 slice of bread = 1/4 cup bread crumbs

4 oz cheese = 1 cup shredded

1 tsp dry herbs = 1 Tbs fresh herbs

1 cup uncooked rice = 3 1/2 cups cooked

4 sticks butter = 2 cups = 1 lb

Emergency Substitutions

1 clove garlic = 1/8 tsp garlic powder

1 whole egg = 2 egg yolks

1 cup oil = 1/2 lb butter

1 tsp baking powder = 1/2 tsp cream of tartar + 1/4 tsp baking soda

1 oz chocolate = 3 Tbs cocoa + 1 Tbs oil

1 Tbs corn starch = 2 Tbs all purpose flour

1 cup sugar = 1 cup packed brown sugar or 2 cups sifted powdered sugar
